Compared to gels and drinks, bars provide more substance and make you feel full. On long rides, this is why they are part of the basic supply: very few people can tolerate only liquid food for four or five hours.
Different flavours prevent flavour fatigue, which on long distances often becomes more of a problem than a lack of energy itself.
Tip: Eat bars during calmer phases, not at high intensity. Chewing and swallowing are difficult at a high heart rate, and a half-eaten bar in your pocket helps nobody.
