The principle works because heat loss is unevenly distributed: the torso faces the headwind head-on, while the arms are kept warm by pedalling. The gilet covers the area that cools down and traps less heat than a jacket.
Models with a mesh back ventilate better, those with a closed back also protect against spray.
Tip: Put the gilet on before the descent and take it off again at the next climb.
