Why an undershirt under the jersey?

Because it pulls sweat away from the skin before it cools there. That is exactly what happens after every climb otherwise: the jersey is damp, the descent starts, and the upper body cools faster than the warmth can follow.

Cycling undershirts fit close, are thin, and are mostly sleeveless or short sleeved. Mesh structures move moisture on quickly. Merino wool absorbs more and hardly smells, even after several hours.

A cotton shirt does the opposite: it soaks up moisture and stays wet. For the layer directly on the skin, it is the worst choice, even on warm days.
