This works because heat loss is unevenly distributed: the torso faces the headwind head-on, while the arms are kept warm by pedalling. The gilet covers exactly the area that cools down and traps less heat than a jacket.
Models with a mesh back ventilate better, those with a closed back also protect against spray from behind.
